Pumpkin for breakfast [or every meal]

Oats/Oat Bran

  • 1/2 c of oats or 1/3 c oat bran
  • ¼ c egg whites
  • 1 c liquid (water/nut milk)
  • ½ pumpkin purée
  • 1 tsp total of spices (cinnamon, nutmeg, cloves, ginger, etc.)
  • ½ c yogurt (I love using maple greek yogurt)
  • toppings (nut butter, granola, hemp seeds, frozen berries, banana, etc.)

Combine oats/oat bran in a pan with egg whites and liquid. Cook over medium high heat while stirring. The egg whites will make your oScreen Shot 2016-01-04 at 8.44.08 PMat
s nice and fluffy. Stir in pumpkin and spices after the mixture starts to bubble, and continue to cook for a few minutes. Fill your designated bowl with yogurt and then pour the pumpkin oats on top and swirl. Top with your favorites; for pumpkin oats, I love using nut butter and berries.

*For more carbs and less protein, replace egg whites with two chopped dates and replace yogurt with banana

Smoothie Bowl

  • 1/3 c pumpkin purée
  • 1 medium size carrot (optional but delicious)
  • ½ frozen banana
  • ¼ c cottage cheese 2/3 c nut milk
  • 1 tsp total of spices (cinnamon, nutmeg, cloves, ginger, etc.)
  • splash of vanilla extract
  • 1 scoop vanilla protein (I prefer vegan protein for my smoothies, such as Vega, Kachava, or Sunwarrior)
  • toppings (granola, fruit, nut butter)

Combine all ingredients in a high-powered blender. Add more liquid if you want it drinkable, but I prefer my smoothies spoonable. Pour into you favorite bowl and spend several minutes carefully arranging toppings. Top with large spoonful of nut butter [always].

*For more carbs and less protein, replace cottage cheese and protein powder with two total frozen bananas

Pancakes

  • ½ c flour (buckwheat, whole wheat, or oat work best)
  • 1 tsp baking powder
  • 1 tsp total of spices (cinnamon, nutmeg, cloves, ginger, etc.)
  • ½ c liquid (water/nut milk)
  • 1/3 c pumpkin purée
  • ½ mashed banana (may sub two dates)
  • 1 egg or 2 flax/chia eggs (1 tbsp ground flax or chia mixed with 3 tbsp water per egg)

Combine flour, baking powder, and spices in a high-powered blender and mix for a few seconds. Add the rest of the ingredients and blend until combined. Pour on hot griddle. Cooking with coconut oil adds another layer of flavor. Top pancakes with real maple syrup, granola, nut butter drizzle, etc.
